Crispy/chewy, soft/robust, juicy every bite “Luxury Oatmeal Cookies” are loaded with the right amount of spice, raisins and chocolate. These are genius cookies! I can confidently say, “the quest for the perfect cookie is over!”.
I started by making granola, and I took Rose’ advise and doubled the recipe. While Rose’ recipe calls for light brown Muscovado or brown sugar, i used palm coconut sugar. I also substituted the canola oil with coconut oil and the other half i used sesame oil. I enjoy the extra nuttiness that the sesame seed oil contributes.To make the home made granola, its pretty simple – I just mixed all component together. I like to mix all wet ingredients along with any spices or flavoring  in a separate bowl. I do the same with the dry ingredients as well, this way I make sure all liquid and flavor are equally distributed. Lastly, send to the oven for a quick bake of 20-30 minutes. You want to stir the granola for even baking, last chill the granola.
While the granola was chilling, I started making the cookie batter. First, I creamed butter with sugar, then I added the egg mixture finish along with adding the flour mixture. When the cookie batter is ready, stir in the granola, raisins and lastly the chocolate chips; mix until all is distributed evenly. Chill in the refrigerator for 30 minutes or a day. The next day I pre-heated the oven to 375F. Meanwhile, I rolled the cookies on a cookie sheet pan and baked for a whole 12 minutes. Mine came out a little bit darker since I used coconut palm sugar.

Here how I made the Granola:

combine well dry mix with the wet mix

spread evenly on a cookie sheet, and bake for 30 minutes. And to make the  cookies:

 roll cookies and then bake

Needless to say, the simple process of making these cookies in no way represents the richness in flavor and the perfection of texture…everything is just right. Inevitably, we had several visits from different cookies monsters!:-)

    Your photographs made me smile! Cookies with a choice of white or chocolate milk and cookies in the sugar bowl, so cute. All of the pictures were great. I wondered about coconut oil so that is really good to know. This is such a great foundation recipe that it can be played with and still retain the original integrity. We loved these cookies, too!

    Wow! Your photos are picture perfect! And I love the first shot of the cookies on top of the milk and chocolate milk! Beautiful composition! Your granola looks very dry..unlike mine.
